Decadent dark chocolate truffles
Dark chocolate truffles are a must, easy to cook and so good on the palate. They are easy to make with family or friends. This is an ideal recipe to have fun while cooking without breaking your head too much. The result will be guaranteed success. You will love the richness of the chocolate taste and ultra melting in the mouth. The ingredients are simple and few: Dark chocolate, cream, butter and cocoa powder.
Have fun and improvise toppings for the surface of the truffles. Cocoa powder is a classic, but you can adapt them to any occasion. You can roll them in crushed and roasted or caramelized nuts, for example. For a child's party you could roll them into unique little candies. In short, the options are immense so have fun.

- Water bath
- 280 g Dark chocolate (70% to 80%)
- ¾ cup 35% Cream
- 2 tbsp. unsalted butter
- 1 tbsp. tbsp vanilla extract
- ½ cup Cocoa powder or other ingredients of your choice for coating the truffles
Break the chocolate into pieces and put it in a large heatproof bowl
Heat the cream, butter and vanilla in a pot over medium-high heat
Put the cream mixture in the bowl with the chocolate

Stir vigorously until the chocolate is completely melted and incorporated into the truffle mix
If your chocolate has not melted 100%, gently reheat the mixture in a bain-marie for a few minutes
Cover the large bowl and refrigerate for at least 2 hours or overnight
Take a large spoon (ex: A tablespoon) to take the truffle mix
Roll into a ball between your hands
Put your filling in a small bowl then roll your truffles in it
Place your truffles on a plate with parchment paper ideally
Store for 14 days in the refrigerator in an airtight container
