Banana bread and dark chocolate

Banana bread and dark chocolate
Isabella offers you a version with pieces of dark chocolate, cocoa nibs and olive oil.
- 1 cup all-purpose flour
- 1 cup whole wheat flour (or spelled flour)
- ¾ cup cane sugar
- ¾ c. baking soda
- ½ tsp. salt
- 115 g chocolate (We recommend Tumaco 70%)
- ⅓ cup olive oil
- 2 large eggs
- 3 very ripe bananas ((1½ cup mashed bananas))
- ¼ cup plain yogurt
- 1 C. lemon zest
- 1 C. vanilla extract
Preheat the oven to 375F.
Oil a loaf pan well or add parchment paper if desired.

Mix the dry ingredients (flour, sugar, baking soda, salt and chocolate) in a bowl.
Mix the liquid ingredients (olive oil, eggs, bananas, yogurt, lemon zest and vanilla) in another bowl.
Combine the liquid ingredients into the dry ingredients.
Pour the mixture into the mold and place in the oven for 50 to 60 minutes.
Leave to rest for 10 minutes before unmolding.
It is possible to bake this recipe in a muffin tin, but the baking time will be 30-40 minutes.
